Chicken breast- 3 boneless skinless sliced into strips
Chicken stock- 284ml carton
Tomato puree- 2tsp
Mi-cuit plums, or ready to eat prunes, stoned and halved- 200g
couscous- 250g/9oz
chopped fresh coriander- a handful, to serve
Directions:
Heat the oil in a deep sided frying pan. Add the onion and cook for 5 minutes until just golden. Add the garlic and cook for minute only, then add the spices and stir for a minute. Add the chicken strips and cook for 4-5 minutes until browned
Add the stock and puree, and season. Cook for 15-20 minutes, adding the plums aor the last 5 minutes
Meanwhile, cook the couscous according to the packet instruction; keep warm. Divide the chicken and plums between the plates, sprinkle with coriander and serve with the couscous
