Spiced Chicken with Plums

Notes

Ingredients:
  • Olive oil- 2tsp
  • Onion chopped- 1 pcs
  • Garlic clove, finely chopped- 1 clove
  • Turmeric powder- 1tsp
  • Ground cinnamon, coriander and ginger- ½ tsp each
  • Chicken breast- 3 boneless skinless sliced into strips
  • Chicken stock- 284ml carton
  • Tomato puree- 2tsp
  • Mi-cuit plums, or ready to eat prunes, stoned and halved- 200g
  • couscous- 250g/9oz
  • chopped fresh coriander- a handful, to serve
Directions:
  1. Heat the oil in a deep sided frying pan. Add the onion and cook for 5 minutes until just golden. Add the garlic and cook for minute only, then add the spices and stir for a minute. Add the chicken strips and cook for 4-5 minutes until browned
  2. Add the stock and puree, and season. Cook for 15-20 minutes, adding the plums aor the last 5 minutes
  3. Meanwhile, cook the couscous according to the packet instruction; keep warm. Divide the chicken and plums between the plates, sprinkle with coriander and serve with the couscous
