Chicken and Brocolli Stir Fry
Ingredients
- Butter- 25g/1oz
- Boneless Skinless Chicken breasts- 450g/1lb (Cut into thin strips)
- Dark soy sauce- 3 tbsp
- Broccoli- 350g/ 12oz (broken into small florets)
- Green beans- 225g/8oz (halved)
- Spring Onions- 1 Bunch (Cut into long slices)
- Corn flour- 2 tsp
- juice of 2 Oranges
- Fresh Basil- 25g/1oz (Roughly torn)
- rice or noodles, to serve
Directions
- Heat the butter in a wok or large frying pan. Add the chicken strips and splash of soya sauce and cook for 5 minutes, stirring until the chicken starts brown
- Stir in the broccoli, beans and half the spring onions and cook for 3 minutes until just cooked
- Mix the corn flour with the orange juice and remining soya sauce. Pour into the pan and cook for about 1 minute, stirring until just thickened. Scatter in the basil and remining spring onions. Serve with rice or noodles
