Cider and Mustard Chicken

Ingredients

  • Vegetable oil- 2 tbsp
  • Onions- 2 sliced
  • Boneless chicken thighs- 8 skinless
  • Garlic cloves- 2 pcs finely chopped
  • Plain flour- 1 tbsp
  • Sweet cider- 300ml1/2 pint
  • Wholegrain mustard- 1 tbsp
  • Boiled potatoes and cabbage to serve

Directions

  1. Heat the oil in a large pan, then fry the onion for 8-10 minutes until browned. Push them to one side of the pan, add the chicken to the pan
  2. Sprinkle with the garlic cook over a high heat for about 10 minutes turning the chicken until browned
  3. Sprinkle the flour over the chicken and cook for 1 minutes, stirring. String in the cider and bubble over a medium to high heat for 2 minutes, stirring occasionally to thicken and reduce the sauce slightly. Stir in the mustard, then simmer, covered for 10minutes. Season and serve with potatoes and cabbage
