Eid Kaak

Ingredients

 

 For the dough

  • Flour- 1 kg
  • Soft butter- 90 gm
  • Ghee- 90 gm
  • Sugar- 400 gm
  • Water- 200 gm
  • Milk- 200 gm
  • Milk powder- 100 gm
  • Yeast- 5 gm
  • Baking powder- 20 gm
  • Baking soda- 5 gm
  • Mahalab powder- 5 gm
  • Cookies spice powder- 15 gm
  • Nutmeg powder- 2 gm
  • Anise seeds powder- 2 gm
  • Mastic few pieces

For the filling

  • Date paste
  • Crushed cardamom
  • Ground anise
  • Rose water is optional
  • Ghee
  • Butter
  • Mahaleb powder
  • Lightly roasted nuts
  • Sesame seeds

 

Directions

 

  1. In a hot bowl add water and sugar, dissolve it then and milk and keep aside
  2. Take another bowl and add flour Ghee and butter, rub it between you hand palm till you have sandy texture . Then add milk powder, mahalab, nutmeg , cookie spice, anise seed powder, baking soda, salt, ground mastic and baking powder, mix well
  3. When sugar syrup is warm add yeast and dissolve it. Pour this to flour mix well it till it form nice soft dough.
  4. Cover it and proof it at least for 5 hours.
  5. Mix the date paste with ghee, butter, cardamom powder and some rose water. Mix it well and keep aside
  6. Prepare the balls with dough and dates mix
  7. Slightly dip the dough ball in oil and press it on the mold as shown in below link (Add sesame seed, nuts or dates). Arrange in a baking try
  8. Bake in a preheated oven at 200*c for seven minutes
