Learn to cook Perfect ‘Basisa’: By Chef Ali Sayed

Basisa by Chef Ali Sayed

Ingredients:

  • Brown flour- 1 cup (or any flour you prefer)
  • Raw sesame- ½ cup
  • Carob or date molasses- 1/3 cup
  • Extra virgin olive oil- 1/3 cup
  • Toasted walnuts- ½ cup (optional)
  • Ground anise- pinch (optional)
  • Toasted sesame seed for garnish (optional)
  • Pistachio for garnish (optional)

Method:

  1. Roast the flour until the color turns golden brown and keep it aside to cool completely
  2. Roast sesame until it turns golden color and keep it aside to cool completely
  3. Add the olive oil to the roasted flour, and mix it well
  4. Then add sesame seed, carob or date molasses and walnut and mix all together until it becomes a dough
  5. Prepare the small balls and coat with the sesame seed
  6. Add the anise powder as optional at any stage
