Zaatar fatayer by Chef Ali Sayed: How to prepare


  • Flour-1 kg
  • Sugar- 2 tsp
  • Salt- 1tsp
  • Yeast- 2tsp
  • Olive oil- ½ cup


  • Green fresh thyme- 300g
  • Onion- 600gm
  • Zaatar leaves- 150gm
  • Sumac powder- 100g
  • Salt- to taste
  • Olive oil- 100g
  • Roasted nuts- ¼ cup
  • Tomato- ¼ cup
  • Green & black olive- ½ cup

How to prepare Zaatar Fatayer?

  1. Prepare the dough in a mixing bowl and add the flour, salt and sugar
  2. Mix the yeast with water
  3. Add the water and oil the dry mixer mix well till it forms soft smooth dough
  4. Coat the dough with some olive oil cover it and let it rest till it doubles in size
  5. In the mean time, prepare the filling
  6. Mix the onion with salt then rub and squeeze it to remove excess water content
  7. Add chopped thyme, sumac powder, olive oil and little salt then mix well and divide the filling into 6 parts.
  8. Take the dough and cut into 3 parts as per your measurement
